Sparkling Hill Resort is proud to introduce John Stratton as our new Red Seal certified Executive Chef.
John brings with him worldly culinary experience from across the globe right down to the nitty gritty of farming where he lived and learned a better understanding of where and how we get our food.
A newer resident to the Okanagan, John is discovering the bounty of the region which has fired up his passion for Farm to Table dining. Originally arriving for the wine, John has quickly been learning about the region’s wealth of local produce, farmers and suppliers and cannot seem to cook fast enough to encompass everything new he takes in. From foraging for wild mushrooms to hiking and enjoying the best of the Okanagan, John has settled in at Sparkling Hill Resort like a local.
Originally from Ontario, John’s culinary travels have taken him from Australia to Asia, Japan, China, Vietnam and Nepal just to name a few. He shares that his biggest learning accomplishment was living on farms around the world and learning about everything from produce to livestock and how the cycles bring us the food we put into our bodies.
John’s goal at Sparkling Hill Resort is to bring a more authentic Farm to Table dining experience by focusing and highlighting the produce and products of the Okanagan. Already making changes to embrace local farmers using more chicken and cheeses of the area to deli and meats right from Vernon B.C.
We are delighted to welcome John to the property and look forward to the new menu launches in December for Lunch and Dinner at PeakFine Restaurant and the In-Room Dining menu.
